A traditional ceramic grinding plate for making genuine garlic and ginger paste — the ridged surface breaks the fibres down into a smooth paste rather than the chunky mince a knife produces. Used across a lot of Asian and Middle Eastern cooking where paste-form aromatics are the base of a dish.
Hand-grinding takes a bit more effort than a garlic press, but the finer, more even paste is the payoff.
